Here's what we're snacking on this month using delicious bananas and fresh strawberries! Banana Chocolate PopsiclesWhat you'll need:
- 4 bananas, halved crosswise
- 1 cup of chocolate chips
- 2 tbsp coconut oil
- Chopped nuts of choice e.g.almonds
Method: 1. 2. Set up a boiler to make the chocolate shell or melt in the microwave. Bring the saucepan of water to a simmer. Add a glass bowl and add chocolate, stirring until melted and then stir in coconut oil. 3. Remove from heat and let the mixture cool to room temperature. 4. Dip frozen bananas completely in the chocolate shell. 5. Immediately dip the chocolate banana in chopped up almonds (optional) and place bananas back on the baking paper lined tray and return to the freezer for 15 minutes.
Easy Cheesecakes with Fresh StrawberriesWhat you'll need:- 1 large egg
- 2 tbsp brown sugar
- 1 and ? cup all purpose flour, unbleached
- ¼ tsp salt
- ¼ cup sugar
- 1 tsp vanilla extract
- ? cup butter
- 1 cup cream cheese
- 2 tbsp heavy cream or sour cream
Method: 1. Preheat oven to 220C. Whisk together flour, sugar and salt. Rub in butter with your fingers until the mixture resembles coarse sand. Add a teaspoon of water if required. 2. Divide into 12 cup bite-size cheesecake pans. Fill half with base mixture and press down firmly. Bake in oven 8-10 minutes until set. Remove and cool, reduce oven to 160C. 3. Beat the cream cheese and sugar until smooth and add the cream, egg and vanilla. Spoon the batter into cooled crusts, using 2 tablespoons in each. 4.
