Here's what we'll be cooking up on the 26th! Australia Day comes around pretty quickly, and after the holiday season it's easy to fall back into over eating and less than healthy habits for the day. We may just be holding onto that summer holiday feeling a little too long! Try these recipes for a delicious and nutritious Australia Day meal.

Cocktail: "That's One Great Grapefruit Rum Cocktail"

It's all fruit, honey as a sweetener and a dash of white spirits - 1 big chunk Ginger

  • 1 slice Pink grapefruit
  • 2 cups Pink grapefruit juice, freshly squeezed
  • 4 tbsp Honey
  • 1 cup Lime juice
  • White rum

Blend and serve with a sprig of rosemary as garnish### Entrée: Crispy Chilli Cauliflower

- 1 tsbp butter

  • 3 tbsp hot sauce (e.g. Tabasco or Sriracha)
  • 1 tsp vinegar
  • Olive oil
  • 2 cloves garlic
  • Whole head cauliflower

Method 1. Combine liquids in a bowl 2. Slice garlic 3. Cut up cauliflower into bite sized chunks 4. Roast cauliflower with garlic for 25 minutes on 200 degrees 5. Combine sauce and cauliflower 6. Roast again for 5-10 mins on 200 7. Serve with raita/yoghurt dipping sauce or Tzatziki

Main: Beef Steaks with Warm Chickpea Hummus and Fattoush

Fattoush, a classic Lebanese salad, is always zesty and filled with crispy bread pieces that soak up all the lovely lemony dressing. Here, we teamed it with hummus which, thanks to the chickpeas, is an excellent source of protein.   • ½ cup Peanuts or Cashews
  • ½ Cup medjool Dates
  • ½ Cup coconut (shredded)
  • Caramel:
  • ½ Cup hulled Tahini
  • ½ Cup raw Honey or agave or Maple

Chocolate:- ½ cup coconut butter or Oil

  • ½ Cup Cacao
  • 2 sachets stevia or a few drops of liquid stevia (or any sweetener to taste)

How to bring it together:1. Line a 22cm round non-stick tart or cake tin with baking paper 2. Combine almonds, peanuts/cashews, dates and coconut in a food processor until sticky 3. Place combined mix into tin and press down firmly to create a ~1cm thick base 4. Combine Tahini and honey in a food processor until thick and smooth. Pour over the base and spread out evenly with a spoon or spatula 5. To make chocolate, mix the cacao and sweetener together first and then mix through the coconut oil (or melted coconut butter) with a spoon until smooth and shiny 6. Pour chocolate over caramel layer and evenly spread out with spoon. 7. Place in freezer for 10-30 minutes to set
