Grilled Figs Stuffed with Goats Cheese RecipeIngredients:
- 20 ripe figs
- 4 oz soft goats cheese
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon roughly chopped fresh rosemary
Method:1. 2. Stuff each fig with about 1 teaspoon of goats cheese. 3. Oil grilling grate and lightly brush figs with olive oil and place on grill. Cook and cover over medium heat until figs are softened and browned slightly, about 5-8 mins. 4. Remove figs to serving tray; drizzle with balsamic vinegar and sprinkle with rosemary. Serve immediately.
Grilled Peaches with Maple Honey Mascarpone CheeseIngredients:- 6 Peaches, halved
- Canola oil
- ½ cup of almond slices
- 8 oz. of mascarpone cheese
- 1 tablespoon of maple syrup
- 1 tablespoon of honey
- 1 teaspoon of vanilla extract
Method:1. In a small bowl, mix together mascarpone, maple syrup, honey and vanilla extract until combined. Set aside 2. Heat grill to medium high heat 3. Brush peaches with canola oil 4. Place flesh side of peaches on grill 5. Grill for 2-3 minutes on flesh side, remove from grill. 6. Serve peaches with a tablespoon of mascarpone and a tablespoon of almond slices.
Grilled Pineapple with Cinnamon DrizzleIngredients:- ½ cup honey
- 1 tsp cinnamon
- 1 pineapple
Method:1. Grill pineapple slices over medium heat for 5-10 minutes. 2. While the pineapple is grilling, mix together the honey (softened in the microwave for about 30 seconds) and the cinnamon. 3. Drizzle the grilled pineapple with the honey and serve.
