candied-baconCrispy & Crumbly Candied Bacon

  • 300g streaky bacon (no loin attached)
  • 1 tbs brown sugar

Method: - Dice bacon into small pieces

  • Cook bacon in a medium sized frypan over medium-high heat for 8 mins or until crisp and starting to crackle
  • Drain the bacon on paper towel & wipe pan clean
  • Reduce heat to medium & add 2 tbs brown sugar
  • When sugar is dissolved, add bacon back into pan and stir to combine
  • Transfer bacon to a lined tray & set aside to cool

Supreme Green Eggs Omelette- 6 Eggs

  • 60 ml pouring cream
  • 2 tbs basil pesto
  • 40g unsalted butter
  • 4 slices of the crunchiest sourdough
  • Fresh basil to serve
  • Lightly beat eggs and cream in a medium bowl
  • Stir in the pesto to combine

Method: - Melt butter in a medium nonstick frypan over medium heat until it starts to bubble

  • Add the egg mixture, letting is set slightly, then use a spatula or wooden spoon to draw the cooked eggs up, allowing the runny egg mixture to run beneath and cook on the pan
  • Repeat this process until the eggs are set
  • Finally, flip ? of the omelette into the centre, then use a spatula to roll the thickest part onto itself to close the omelette
  • Serve the eggs on toast with your crispy bacon and garnish with fresh basil
