Deck the halls with bowls of mulled wine, tra-la-la-la-la-la-la-la-la!_Ingredients: Makes 12_2 bottles of rich fruity red wine like shiraz or Merlot 500ml good-quality cloudy apple juice 100g caster sugar 2 cinnamon stick 2 star anise, whole 6 cloves, whole 1 vanilla pod 2 orange, peeled 1 lemon 1 lime 2 small apples, sliced - red _Method:_1. Peel large sections of peel from your oranges, lemon and lime using a vegetable peeler. Put the sugar in a large saucepan over a medium heat, add the pieces of peel and squeeze in the orange juice. Add the cinnamon stick, star anise, cloves, scraped vanilla pod and seeds. Stir in just enough red wine to cover the sugar. 2. Let this simmer until the sugar has completely dissolved into the red wine and then bring to the boil. Keep on a rolling boil for about 4 to 5 minutes, or until you’ve got a beautiful thick syrup. This will create a wonderful flavour base by really getting the sugar and spices to infuse and blend well with the wine. 3. When the syrup is ready, reduce the heat to low and slowly warm the remaining red wine for approx. 10 minutes. Now you are ready to serve, ladle into glasses and enjoy!
