Raw Salted Caramel Slice
1/2 cup pitted dates 1/2 cup almonds 1/4 cup coconut oil
Blend all ingredients in a food processor then pack down into a tin and leave to chill in the freezer whilst you make the caramel layer.
1/2 cup raw honey 1/2 cup tahini (a good source of protein made from sesame seeds) ¼ tsp salt
Blend all ingredients in a food processor and layer on top of the base. Replace in the freezer whilst you make the chocolate layer.
1/2 cup of cocoa powder 1/2 cup of coconut oil Rice malt syrup to taste (or sweetener of choice)
Mix all ingredients together in a medium saucepan on low heat. Layer on top of caramel layer and replace in the freezer and allow to fully set for about 2 hours.
Healthy 'Oreo' Cookies
1 cup (120g) pecans 1 cup (120g) walnuts 1 cup (175g) dates ½ cup (120ml) rice malt syrup Pinch of salt (1/8 tsp) 2 tsp pure vanilla powder 6 tbsp cacao powder
Mix all ingredients in a food processor until the mixture reaches a dough-like consistency. Remove from processor and roll the dough into a large ball. Roll out on a cutting board using a rolling pin to desired thickness (approximately 0.5cm works best!). Cut into circles using a cookie cutter and then place in the freezer until firm.
1 cup (150g) soaked cashews 1 cup cacao butter (240ml) (cacao butter chips in melted liquid form) 4 tbsp rice malt syrup 2 tsp vanilla essence 1/4 tsp salt
Blitz ingredients in the food processor until smooth and creamy. Spread filling onto one side of a chilled cookie and sandwich a second on top. Repeat until all cookies have been sandwiched. Set completed 'Oreos' in freezer overnight. Best eaten within 30 minutes of removing from freezer.
