  • 1 cup flour of choice
  • 1 tablespoon sugar
  • 2 tablespoons baking powder
  • 1/8 teaspoon salt
  • 1 cup soymilk
  • 2 tablespoons vegetable oil
  • 1 punnet of raspberries chopped

Optional: - 1 punnet of raspberries

  • 1/2 cup maple syrup

Steps: 1. Combine the 4 dry ingredients (flour, sugar, baking powder and sugar) in a bowl. 2. Add the soy milk and vegetable oil to your mixture. Mix until smooth with wooden spoon. Fold in the chopped punnet of raspberries. 3. Spray pan with oil and heat to medium heat. When the pan is ready, spoon the mixture into the pan in batches. 4. Flip carefully when you see bubbles in the middle of the pancake or if the edges look stiffened. 5. To create the raspberry jam, melt a punnet of raspberries on the stove with 1/2 cup of maple syrup. Dust pancakes with icing sugar.

Raspberry and Blueberry Lemon Cake [video width="1920" height="1080" mp4="http://blog.marleyspoon.com.au/wp-content/uploads/2017/04/KitchenAid_MothersDay_Cake.mp4"][/video] Ingredients: - 2 large eggs

  • 1 cup caster sugar
  • 1 cup sour cream
  • 1/2 cup light olive oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 cups flour
  • 2 tsp baking powder
  • 1 lemon
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • Icing sugar for top

Steps: 1. Beat 2 eggs and 1 cup of sugar with whisk on high speed for 5 minutes until thick. 2. Add 1 cup sour cream, 1/2 cup oil, 1 tsp vanilla, 1/4 tsp salt and whisk on low speed until well combined. 3. Whisk together 2 cups flour and baking powder and add to batter 1/3 at a time. Finally, add 1 tsp of fresh lemon juice and 1/2 tsp lemon zest. 4. Rinse berries and drain well. 5. Pour half of the batter into prepared springform pan. Top with raspberries and spread with remaining batter. 6. Sprinkle blueberries on top. Bake at 180 for 45-55 minutes. Let it rest in a pan for 15 minutes then remove and cook until room temp. 7. Dust with icing sugar.

Baked Cinnamon Apple with Whipped Cream[video width="1920" height="1080" mp4="http://blog.marleyspoon.com.au/wp-content/uploads/2017/04/KitchenAid_CaramelApple-1.mp4"][/video] Ingredients: - 4 large apples

  • 1 tbsp granulated sugar
  • 1 tsp cinnamon
  • Store bought whipped cream
  • Maple syrup

Steps: 1. Remove the core of all four apples and using a spiralizer, thinly spiralize the apple without it breaking. Place in a bowl with lemon juice and water to ensure they don't go brown while you do the remaining apples. 2. Place the spiralized apples onto a wooden chopping board and push a silver metal skewer through the apples, close to the middle (but not too close!). 3. In a separate bowl, mix together the cinnamon and sugar. Pour this mixture onto a new wooden chopping board, creating a mountain of sugar. 4. Place the apple skewer on its side and roll through the sugar mixture, coating the entire apple. Use a spoon if necessary to sprinkle in between the slices. 5. Grab a loaf pan and set the skewers so that they're resting in the pan but not touching the bottom. Baking at 200 degrees for about 20 minutes - keep checking as they might burn quickly. 6. Carefully remove the skewer (careful it'll be hot) and arrange the apple on a serving plate. Pour some maple syrup over the top and add whipped cream to serve.

Spiralized Apple Crumbed with Whipped Cream[video width="1920" height="1080" mp4="http://blog.marleyspoon.com.au/wp-content/uploads/2017/04/KitchenAid_AppleCrumble-1.mp4"][/video] Ingredients: - 5 large red apples

  • 1 tsp cinnamon
  • 1/3 cup brown sugar
  • 1/2 cup fresh orange juice
  • zest of 1 orange
  • 1 cup almond meal
  • 1 cup rolled oats
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup coconut oil
  • pinch of salt

Steps: 1. Preheat oven to 165 degrees celsius. 2. Spray a 9 x 13-inch baking dish with olive oil spray and line with baking paper. 3. Spiralize apples to desired size, we used the KitchenAid spiralizer apple attachment. 4. Place apples in a large mixing bowl and add cinnamon, brown sugar, zest and orange juice. Spread mixture into the baking dish. 5. In a separate bowl, add almond meal, rolled oats, brown sugar, cinnamon and salt and stir. 6. Add coconut oil and mix together with your hands. 7. Sprinkle crumble mixture on top of apples and bake for 40 minutes. 8. Serve warm.

Potato Hasbrown Egg Nests[video width="1920" height="1080" mp4="http://blog.marleyspoon.com.au/wp-content/uploads/2017/04/KitchenAid_Potato.mp4"][/video] Ingredients: - 12 eggs

  • 2 medium russet potatoes
  • olive oil spray
  • salt and pepper to taste

Steps: - Preheat oven to 200 degrees

  • Spiralize the potatoes and spray your muffin tin with olive oil spray
  • Press spiralized potatoes into the muffin tin, make a cup for the eggs to go into.
  • Pre-bake the potato so they are pretty firm.
  • Crack one egg into each cup (if the eggs are large, remove some of the egg white).
  • Return to oven and bake 10-15 minutes depending on how you like your eggs.
  • Serve immediately, sprinkle with salt and pepper.
